don't be deterred by the tofu-i promise no one will ever guess it's there.
PEANUT BUTTER PIE
in a food processor (or strong blender), combine:
8 oz. peanut butter, any kind
3/4 pkg. mori-nu tofu (silken, soft)
3/4 cup sugar or brown sugar
whip it up for a few minutes so it gets smooth 'n fluffy.
pour it into a graham cracker or chocolate cookie crust (store bought for extra-ease).
sprinkle with fun stuff-chocolate/peanut butter chips, chocolate shavings, etc.
chill for an hour or so (or freeze til firm for an ice-cream-y pie).
