We use natural yeasts that are designed to ferment grape juice into wine.. if that is brewer's yeast (which it seems like it might be), I think we generally call them Levure bio or Levure organique.  If this is the kind of yeast you're looking for, I can ask my parents to find out what the technical lingo is and they might know if it's different in the culinary world.

We use the words naturel and alimentaire a lot too but those just mean natural and edible so I don't think you'll need to specify edible yeasts.  Grin

My friends and I have this decadent habit of making two pizzas (loosely defined as a circle of dough with toppings) and using them as the bread in a giant pizza sandwich.  The center food depends on the toppings of the pizzas, naturally.

The last pizza sandwich was a great success.  We celebrated the 21st birthday of a friend with a pizza sandwich one part dirty downhome southern pizza and one part classic Italian pizza with fried okra and fried tofu in the middle.  The southern pizza was just dough, mashed potatoes, fried potato skins and gravy.  The Italian pizza was dough, tomatoes, black olives, green pepper, onion and olive oil.  And then tons of fried okra and fried whatnot in the middle.  It was really delicious and I'm not posting a recipe (because we're disorganized) but I am posting this little video of us making the pizzas and enjoying.

Uhm, I bleeped out the F bombs, but there's still a little fecal language here and there.  Especially around the completion of the first pizza; it's frustrating and exciting all at once.)

I haven't had the chance to participate much in the forum since I'm mostly just a browser, but I figured this would be appreciated.

Also, congratulations, Pat.  You found the best way to celebrate getting your braces out: putting all six feet of bubble tape in your mouth at the same time.  I feel like this bubble belongs on crafster.
