With it being midterm time and me being stressed out to the max because some sick fool put my organic chemistry midterm on monday and then on tuesday my physics and calculus midterm.. so all i really want is a nap and food that is bad for your system and your soul...specifically the type of food that is deep fried and salty!
However, being a bit of a health food nut and not really eating meat this whole craving doesnt really work for me but when my brain decides it wants fries and chicken nuggets what am i to do???...put a healthy/ veggie spin on it of course!
So, I went out and bought a huge amount of packed tofu (hard/drained tofu) for really cheap and also yams because i really dont like regular potatoes and yams have so much flavor and goodness in them
then i came home and slice the tofu into chicken nuggetish slices and poked holes in the slices with a fork and put them in a bowl with hot sauce and sweet chili sauce and just let it chill out in there. Then i took my yams, sliced, covered with salt, cumin, pepper and garlic and a bit of olive oil. Put them on a baking sheet and cooked. When they were almost done i took the tofu, and dipped the slices into bread crumbs and pan fried it..YUM.......and i had my "chicken" nuggets and fries and they were amazing.
and now here is the recipie...
- 1 med yam scrubbed and cut into fries shape
- good pinch on salt and pepper
- large sprinkling of cumin and paprika (or any types of herbs you like)
-drizzle of olive oil
-- combine all ingredients and mix. place on a baking sheet in a very hot oven (i have mine at about 415-425) and let bake for about 15 min. Check after 15 min, and if crispy flip over to other side and cook for another 10 min
-firm drained tofu cut into slices
-sweet chilli sauce (need enough to make a marinade, i used about 4 tbsps with about 1 tbsp of water mixed in)
--take tofu and poke holes into it with a fork. Place it in a ziploc bag with the sweet chilli sauce and hot sauce and let it chill out for however much time you have. After, take the tofu out of the bag and dip it into the bread crumbs to coat it. Place on a hot slightly oiled pan and cook on both sides until crispy and golden brown
and there you have it....super easy, yummy, healthy, "junk" food for the stressed out soul!
