i generally tend to do the same thing but i press mine first to remove more water and i think it forms it together more ( i wrap  the tofu in paper towel, just enough so it covers all sides, than i wrap that in like 4 dish towels and put it in between 2 cutting boards and weigh the top down.)

whole foods makes a buffalo garlic tofu that i make at home. it not the exact recipe they use but ut tastes like it i use like 10 - 15 cloves of garlic and equal parts soy and rice vinigar some black sesame seeds and some fresh grated ginger( i use the kind in a squeez tube so im not sure on the amount) i cube rather than slice the tofu and than i bake or pan fry in a sesame/ canola mix(just enough to make it not stick)

you could cut it up and toss in brewers yeast. just plain firm tofu and brewers yeast makes it almost like its fried tofu nuggets or cuttlets i recomend baking if using this method

i started this pattern about a month ago, ehrn i first noticed it on Ravely, with cheap-o yarn and decided that it was too good for that crap and havnt started back up yet. im thinking im gonna re start maybe in grey or black.. have to check my stash see what i have enough of.

si just a backround...
ive been crocheting for about 3 years and tought my self how to knit about a month ago with the thought thai i only wanted to knit socks... i realized that there are too many other things that are calling me one is Clapotis.
im left handed and  i think i knit left handed( my working needle is in the left)
now the first 3 rows  are the problem all the other stuff i can manage once there is a stable base on the needle.. any one have any sugestions how advice for this inexperianced knitter. i want to experiance the joy of clapotis too!

i taught my self to knit like 2 months ago just so i could make socks. thow are great not as scarry and hard as everyone says huh? to me the Clapotis im trying to start is harder!

Its ADORABLE!!! my edging comes out "off" too and ive been crocheting for a couple of years. its something about not having a distinct ch/st to put the hook through. im never sure how many stiches to do either ( on the sides)
