I've had this cupcake book for a while and today decided to try one of the ones I'd been eyeing up for a while, the pinapple cupcakes with citrus frosting.
As the frosting recipe called for cream cheese which always kinda puts me off recipes, i changed it and made lemon and lime buttercream instead. So half the cupcakes have lemon icing the others have lime and then there are two lonely ones without because my dad said they taste just as nice without too. You put pinapple chunks and juice in the cake mixture so they taste kinda like pinapple upside down pudding, but slightly nicer I also made two muffin sized ones as i had extra mixture (I doubled it from the original recipe) so...

The ones to the right are the lime ones and the ones to the left are the lemon ones! I can't wait to eat them and judging by the amount of people hovering round them in the kitchen neither can the rest of my family! ha ha
