Are plums acidic?  I've canned peaches, and might try tomatoes this fall, but I'm new to it and want to stick to acidic foods. Did you process the plum butter after sealing it in the jars?

I'm not sure about the acidity.  I did process the jars in a hot water bath.

I've made apple butter before, and I like it with lots of cooking down, do you cook down the plum butter too? Does it take about as long as apple butter?



It took me about three hours on the stove top.  I probably could have cooked it down another hour, but I had to go to bed Smiley

Oh! I want some mulled cider jelly! 
I used low sugar pectin to make strawberry jam once and it turned a brownish color.  I was scared to eat it after that.  It was one of my first experiences with canning.  It tasted good when I first made it though.

I wish I could give you samples Smiley  Five-Spice powder is used in Chinese cooking.  I used a Dynasty brand and it has the following in it: cinnamon, star anise, fennel, ginger, cloves, white pepper and licorice root.  I guess it should be called 7 spice powder Smiley
