my fiance is half korean and is 6'3" so I'm totally with you on the tall koreans!
I don't know much about the irish culture but you could easily add in small korean touches to represent your fiance. You could do a small set of ducks on top of the wedding cake facing each other...I'm seriously considering that. It symbolizes life long happiness - and I figured it would also be a cute momento that we can put around the house after the wedding too. (if you're in a fight you're supposed to put the ducks tail to tail. haha!).

Otherwise for food you could also do a korean wedding noodle soup (the korean name escapes me right now). The long noodles are supposed to represent a long marriage. mmmm...bulgogi....now i'm getting hungry!
