I don't post on this forum very often despite browzing through atleast once a day so I know how clever and talented you all are (extremely so in comparison to me, especially in the baking department!
I'm rubbish when it comes to baking but for my friend's birthday I want to maker her monster cupcakes using coloured royal icing on rainbow buns (cupcakes in American?).
My buns never
raise, they either stay flat or flop over the top of the cases. Also, they never
cook in the middle?! they look cooked on the outside but stay gooey on the inside no matter how long they're in the oven for, they even do all of the above with a cake mix lol.
As a fall back I'm hoping to buy some plain buns and decorate them but I want to make rainbow cupcakes, simply because they're amazing lol.
My basic recipe is 100g of s.r. flour, marg and sugar with 2 eggs.
I don't have an electric hand whisk so it's basic manual labour lol but any tips or better recipes (basic and cheap lol) would be much appreciated. I think for the royal icing I'm going to chicken out and buy some ready made stuff, just add the colour at home. Any tips on icing would be great too.
