I made cardamom bread for the first time last weekend.  I have fond memories of my mom making it on Christmas and Easter, and thought I would give it a try, since even if she makes it we are in different states and that does me no good.  It came out really well, but I ran into difficulties when trying to braid it (as you can probably see in the pics Undecided ).  Any suggestions or help would be appreciated.

So this may sound icky to some, but if you love tuna and anything casserole like then this is for you.  This is a cheap recipe and can make a pan big enough to last a week.  I know it may sound odd to some but give it a try its creamy tuna goodness may surprise you.  Plus if you have kids this is a good recipe to let them help with since there is no cutting involved.

1 can of tuna
1 can of cream of mushroom
1 box of elbows or medium shells
1 can of milk (fill the empty cream of mushroom can with milk)
Miracle whip
Italian seasoning
Garlic powder or minced garlic (either will work I prefer the powder though)
If you want to throw in peas or corn or carrots feel free.

Preheat oven to 325

Step 1:  Cook the pasta in a large pot, if you have a stock pot type pan this is best because you can combine everything in it.  I am a big advocate of less dishes to wash.

Step 2:  When the pasta is cooked drain and rinse it.  Then pour the shells back into the pot (make sure the burner is off), or if you don't have a large enough pot to combine everything in then a large bowl will work just as well.  At this point you are going to mix in all the ingredients.  I put a TON of garlic powder (I have a love affair with my garlic powder, but lets just keep that between us) in mine, and a lot of Italian seasoning so it does not taste bland.  Pour in the can of mushroom soup ignoring the fact that it looks like a gross blob of grayness, it is worth it for the creaminess.  Usually for the Miracle Whip I just take my wooden spoon and put in about 2 or 3 heaping spoonfuls of the stuff.  Fill the empty soup can with milk and dump that in.  Don't forget your can of tuna (undrained if it is in water).  Stir everything together until it is all coated.

Step 3:  Spoon into a casserole dish, whatever type you have lying around will work.  Heck I have halved the recipe and made it in a brownie pan before.  Put it in the preheated oven for 30 minutes and enjoy.

Hi.  I decided to stop lurking and actually put up a post.  Since cooking is the thing I feel most comfortable with I thought I would start with this recipe  Smiley.  I usually like to cook an entire chicken, with potatoes and carrots, and eat off of it for a week at least once a month or so (I am a grad student so this is very cost effective for me). I am always amazed how easy it is to stretch a chicken.  This is one of the easiest and yummiest recipes my mom passed down to me.  For this recipe I usually reserve some of the potatoes and carrots from when I roasted the chicken. So you will need:

2 cups cooked chicken
cooked carrots
onions
cooked potatoes
1 small can of peas
3/4 cup of milk
2 pie crust (store bought or homemade your choice)
italian seasoning
black pepper
3 Tablespoons butter
1/2 cup of flour

Step 1:  Microwave butter, flour, and milk until butter is melted (or just about melted).  Add a healthy shake of Italian seasoning and pepper (if you need more specific measurements I would say at least a tablespoon). Whisk until creamy and thick, it usually does not take to much whisking to achieve the right consistency. 

Step 2: Combine all the ingredients into the sauce and stir so everything gets nice and coated.  Pour into pie crust.

Step 3:  Bake at 350 for 1/2 an hour.

That's it.  This is a great throw together recipe on week nights when you don't know what to make and are staring into the fridge.  Plus it makes enough for a couple meals if you are feeding one or two people.  Hope you enjoy it.
