Hi. I decided to stop lurking and actually put up a post. Since cooking is the thing I feel most comfortable with I thought I would start with this recipe
. I usually like to cook an entire chicken, with potatoes and carrots, and eat off of it for a week at least once a month or so (I am a grad student so this is very cost effective for me). I am always amazed how easy it is to stretch a chicken. This is one of the easiest and yummiest recipes my mom passed down to me. For this recipe I usually reserve some of the potatoes and carrots from when I roasted the chicken. So you will need:
2 cups cooked chicken
1 small can of peas
3/4 cup of milk
2 pie crust (store bought or homemade your choice)
3 Tablespoons butter
1/2 cup of flour
Step 1: Microwave butter, flour, and milk until butter is melted (or just about melted). Add a healthy shake of Italian seasoning and pepper (if you need more specific measurements I would say at least a tablespoon). Whisk until creamy and thick, it usually does not take to much whisking to achieve the right consistency.
Step 2: Combine all the ingredients into the sauce and stir so everything gets nice and coated. Pour into pie crust.
Step 3: Bake at 350 for 1/2 an hour.
That's it. This is a great throw together recipe on week nights when you don't know what to make and are staring into the fridge. Plus it makes enough for a couple meals if you are feeding one or two people. Hope you enjoy it.
