Oh wow. This looks amazing! Have you ever tried to make a tortilla espanola? It utilizes eggs, potatoes and onions in a wonderful, delicious Spanish comfort food. Most of the recipes out there will tell you to fry the potatoes, but I made a version where I steamed the potatoes instead and I actually liked it a lot more!
My roommate and I made this in my crockpot and we LOVE IT! Ours had whole flaxseed, almonds, cherries, cranberries and blueberries in it. We eat it every morning for breakfast on some yogurt. I added about a cup and a half of honey to ours because I really like clustery granola but I found it didn't make it very clustery, which is ok as it's jam packed with honey flavor and is REALLY good on vanilla yogurt.
Has anyone tried to make this with maple syrup at all?
Oooh yum! These look so tasty! I'm off of my college's meal plan (partially because it's WAY too expensive and also because the food is really really unhealthy and disgusting) and these empanadas look amazing and perfect for a lunch on the go for me! Thanks for the recipe!
