I'm kind of confused by your pattern, but, I think that usually you start with any multiple of the number of stitches in the repeated pattern, "plus 3 for initial dc" or maybe plus 2 if it's an initial sc?

You can use them for stuffing if you make amigurumi.  Somebody posted a pattern for rice-filled handwarmer amis here the other day, and she used yarn scraps to stuff the little arms and legs because it won't melt in the microwave when you're heating up the rice.
