I make these too!
My recipe calls for an egg and a 1/4 cup (at least) of shredded parmesan per pound of zucchini. after I grate the zucchini, I let it stand with 1/2 tsp of salt (per pound) to let some of the water come out, or else it takes forever to cook. Then I sqeeze it out like a sponge into another bowl and add int he egg and cheese. fry them up in olive oil or butter and they're good to go!
I'm actually a bit of a veggie hater, so these are so great for me to do.
And they always seem to surprise people who haven't had them, because they're kind of an odd way to fry up a veggie! My mom says in her recipe that any summer squash or mixture of them works, but I haven't tried anything else yet.
