I know exactly how you feel--I'm just getting into the visual journaling myself, and looking at all the other gorgeous journals can be really overwhelming! Here's something I've found really helpful, though: Youtube! There are a couple great VJ-ers on there who have made videos about their pages and even how they handmade their journals. I've spent wayyyyy too much time this week watching these.
Here are a few artists' channels I've found helpful:
Violette makes gorgeous, bright journals using watercolor, acrylic, gesso, and some collage work. http://www.youtube.com/creativeboho
Teesha Moore goes through all of the steps she uses in a series of twelve videos that show you from start to finish how she handmakes her journals, then decorates them, then uses them. http://www.youtube.com/user/tracyvmoore#p/u/16/1z6qmXGRrsE
Milliande uses a whole range of techniques with paint, ink, gesso, and collage, and has a ton of videos uploaded. http://www.youtube.com/user/milliande#p/search/0/zSyoOCeIF80
