Good question! I feel plushie / stuffie are interchangeable; both stand for a soft sewn toy. They work better than stuffed animal since a variety of thing are sew and I personally think both terms are cute.
Not to familiar with mascot, the few times Ive seen it used, usually it is a small toy, about palm sized.
Chibi is a style, usually small and cute, often Japanese.  For example with a human figure a chibi version would have a large oversized head, big eyes, smaller body, and overall simpler. 

Hope that helps a bit, Im sure there might be different ideas.  Over all I wouldnt worry too much about labels and have fun!

Long time lurker, first time posting a project.
I really enjoy sewing and making plushies. Lately I've been making small felt dolls, they stand around 4.5 inches tall.  I thought I would share a few.

This is a set of Left 4 Dead survivors I made for my husband.

Very cute, you should make more- maybe an angry storm cloud.  I like the raining of hearts and ice cream.
