Like stage-fright, but not.

I decide what I want to do and figure out how to do it, but when it comes to making that first cut or stitch, I just can't see it through.  I stand there staring at the fabric with scissors in hand, and, well, that's as far as I get. 

It is the fear of botching it that I cannot get over.

If I want to reconstruct clothing I worry that I will spoil something that is perfectly wearable and if I want to make something from scratch I worry I'll ruin decent fabric so I end up doing nothing.

I feel so craftily impotent!  Any advice?

I'm modifying some T-shirts and I don't want the cut edges to fray.  I don't have a sewing machine so sew everything by hand.  What is the best way to finish the edges?  Just fold them over a few times and hem them, or cover them with other fabric to protect them?
