I made a batch of cupcakes for my sons school carnival auction and a batch of minis for the bake sale! The toppers were just as fun to create as the cupcakes. Tons of fun!*Almost* Buttercream Frosting
Makes 3 3/4 cups
* 1 cup (2 sticks) unsalted butter, preferably organic, room temperature
* 2 cups sifted confectioners' sugar
* 1 jar (7 1/2 ounces) marshmallow Fluff
* 2 teaspoons pure vanilla extract, preferably organic
Whip butter 'till smooth and creamy, about 3 minutes. Beat in sugar. Mix in fluff and vanilla. Lick spoon clean.
