Burp cloths were my most prized possession when my young'ins were little!  Those are going to be WELL used Smiley

from my cousin's pinterest list she sent me this peacock applique pattern and I whipped one out today


Also decided to add a little pizzazz to my cube at work (my running joke with hubby is that I lack pizzazz)

But here's my dilemma:  Can anyone think of anything crocheted that preschool aged boys would like?  None of my former co-workers could think of anything, and neither could I.

I find that Groundhog Day is highly underrated and I searched high and low for Groundhog themed decorations to no avail.  So I Improvised and made a Groundhog Day Cake!

It's really just a Kentucky Butter Cake recipe that's old as the hills, and a cut out of a groundhog.  But with a little ingenuity it looks like the groundhog is bursting from his burrowed nest to give us all the good news that winter is over!

The cake recipe:
Cake:
3 cups  all-purpose flour
2 cups white sugar
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk (I used a scant cup of whole milk with 1 tbsp. white vinegar, worked great)
1 cup butter, softened
2 teaspoons vanilla extract
4 eggs
icing:
3/4 cup white sugar
1/3 cup butter
3 tablespoons water
2 teaspoons vanilla extract

Heat oven to 325F, grease and flour bundt pan

Combine all cake ingredients and large mixer and mix for 5 minutes.  Don't worry about creaming the butter and sugar, this cake pulls together nicely

Pour into prepared bundt pan and bake for 1 hour

cool 10 minutes and invert onto wire rack.  Do not wash the pan yet!!

poke holes in the cake using a bamboo skewer, this will help the icing soak in

Combine icing ingredients in pan and boil for 1 minute without stirring, remove from heat and stir lightly

return cake to pan (careful it's still hot) and pour icing over the cake, sit back and watch as it soaks in (it's mesmerizing I tell ya)

Let sit til cool at least an hour or even better if it sits overnight.  Turn out onto cake pan, slice and enjoy!
