Craft Challenge #77, Foodie Frenzy, has been announced!
Your challenge this month is to whip up and share your favorite personal recipe! It’s going to be a tasty challenge, so get cooking!

Ground beef
Yellow (summer)squash
Zuchinni (italian) squash
Tomatoes
Gold potoatoes
1 can V-8 juice
Brown ground beef (in olive oil). Wash, remove ends & any blemished spots on the vegetables. Slice or dice the vegetables into the pan with the browned ground beef.
Add a can of V-8 if desired. Season to taste. Diced tomatoes can be used in place of fresh tomatoes. Onion, green chili or garlic are optional vegetables to add. Season with salt & pepper & simmer until the vegetables are tender. This recipe is versatile, & can be adjusted to low-sodium, or low fat, by choosing lean ground beef, no salt seasonings, & low sodium canned (or fresh)tomatoes & low sodium V-8 juice, (or a small amount of water can be added in place of the vegetable juice.) Using an iron skillet makes it an old-fashioned dish. It’s easy, one pan, quick & tasty, combining the veggies & the meat in one dish.
In the fall, when it’s cool enough to heat the oven, & zuchinni (italian) squash has overrun everyone’s garden, take one large zuchinni, wash it, split it lengthwise, scoop out the seeds. Lay the zuchinni, split side up, into a large pan. Put a little water in the bottom of the pan & fill the zuchinni boats with your favorite meat loaf. Bake until meat is done & zuchinni is tender.0
(Add roased green chili to your meat mixture, for a pop of flavor.)
Serve with garlic bread & iced lemonade.
